Score a tailgating touchdown

(NAPS) - This football season, many Americans will head to stadiums across the country to cheer for their favorite teams. And along the way, many will stop in the parking lots for pregame tailgating parties.

The National Pork Producers Council has teamed up with football legend and restaurant owner Mike Ditka to create the ultimate tailgating pork chop recipe, Mike Ditka’s Official Tailgater’s Pork Chops with Grilled Honey-Glazed Cinnamon Apples.

Ditka, along with chef Tom Kenny of Mike Ditka’s restaurant in Chicago, will also be hosting a tailgate party at the Championship College Bowl in Miami on Jan. 3.

Football fans have a chance to join Ditka and Kenny in Miami. Ten grand prize winners of The “Other Tailgate Party” Sweepstakes, sponsored by NPPC, will receive a four-day, three-night trip for two to the Championship College Bowl. The trip includes round-trip transportation, lodging for two, two game tickets and an invitation to The “Other Tailgate Party.”

Ditka's official tailgater's pork chops

For the Pork Chops
  • 8 one-inch-thick pork rib chops
  • 4 cups orange juice
  • 1 cup soy sauce
  • 2 tablespoons chopped garlic
  • 1/2 cup Dijon mustard
  • 1/2 cup honey
  • 1 teaspoon cayenne pepper
In a glass or non-reactive baking dish, whisk together orange juice, soy sauce, garlic, mustard, honey and cayenne pepper. Add pork chops; cover and marinate in the refrigerator 12-24 hours. Remove pork and discard marinade. Season pork with salt and pepper and grill for 8-10 minutes, turning once.

For the Apples
  • 1 cup butter
  • 1 1/2 tablespoons cinnamon
  • 3 tablespoons honey
  • 4 Granny Smith apples, cored and sliced 1/4 inch thick
  • Dash salt /ground black pepper
In a small saucepan, heat butter, cinnamon and honey over low heat until melted, stirring constantly. Season apples with salt and pepper and place on grill for 2 minutes on each side while brushing with butter mixture.
